"Shrimp Cocktail"

Ingredients
-Shrimp
-Cilantro
-Cucumber
-Tomatoes
-Lemon (juice)
-Ketchup or Clamato Cocktail Mix
-Onion

Shrimp
Cook Shrimp, in boiling water, squeeze lemon juice and add a pinch of salt. once cooked set aside(DO NOT discard the Brine, it serves as the "cocktail juice") Once Cooled add the Ketchup or Clamato Mix.

Garnish
Chop Cilantro,Cucumber,Tomatoes,and Onions into squares. add to brine. mix well add more lemon juice and add Avocado(if desired) per serving.(NOTE: don't add to cocktail itself because it will brown once stored).

Serve with Tostadas or Crackers add some Tapatio and ENJOY!!

Camarones a' la Diabla (Spicy Shrimp)

-Shrimp.
-Ketchup or Tomato sauce (I like ketchup it adds sweetness).
-Garlic.
-Butter.
-Tapatio or Hot sauce of your choice.
-Basil

Note:As far as measurements go, it really depends on how much shrimp you buy and how much sauce you want.

what you WILL need is about 1 cup of butter to cook the garlic...
onece the garlic is lightly browned  put shrimp into garlic and butter mixture.
then let that cook for about 8 to 10 min on low heat, or until a nice pretty red.
Next add the ketchup or Tomato sauce.
 mix well and add your hot sauce, make it ass spicy as you want it. To that add basil (to taste). and serve with red or white rice.

Breaded Mayo Chicken

  • Chicken Breast. (How ever many in package)
  • 2 cups of Italian Bread Crumbs.
  • 1/2 cup of Mayo.
  • Black Pepper-To Taste.
  • Parsley Flakes.
  • "Knorr" Cubed Chipotle.(1 cube)
  • 1/2 cup of Parmesan cheese
Bread Crumbs
First, place Bread crumbs in a bowl big enough so you can dip your chicken.
Next, combine Black pepper and Parsley flakes and 1/2 cup of Parmesan cheese into the bread crumbs 

Mayo
 in another bowl crush Chipotle cube and mix into mayo.

Chicken
Brush Chicken with mayo and dip into crumbs.
(don't drench in mayo or crumbs wont stick)

Spray aluminum with PAM because they will stick.
Heat uncoverd in 425 degrees for 40 min's
